Nasi Goreng Istimewa  

Around the globe, there are many different ways of preparing Nasi Goreng. The only constant ingredient is rice; everything else is determined by the cook's taste and availability of ingredients. For many Indonesians, meat is too expensive, so tofu or merely the eggs are used for protein. Whatever you choose to use, we're confident you will enjoy this treat, which can be served as a main dish when accompanied with meat or a delicious side dish.

Ingredients:
2 cups Pre-cooked Rice (your choice)
2 cups chicken or pork, diced
2 TBSP. vegetable oil
1 large green onion, sliced
5 red onions, chopped
2 cloves garlic, chopped
½ tsp. coriander
½ tsp. ginger
1/8 tsp. ketchup
1 red chili pepper, crushed (equivalent to 1-2 TBSP dried Chili flakes – depending how spicy you like your food!)
2 TBSP. sweet soy sauce
1 cup cooked shrimp (optional)
***1-2 cups of additional chopped or sliced vegetables can be added to suit the taste of your family. We like to add carrots, corn, green beans and cabbage.***

Instructions:
In large wok or frying pan, fry meat in oil until light brown. Add onions, fry until brown. Lower heat, add coriander, ginger, ketchup and red pepper. Mix well, fry one minute. Add soy sauce, shrimp (if you have) and any additional vegetables you may prefer and mix well. Cook till vegetables are firm but not crunchy. Add the cooked rice, stirring constantly until rice turns light brown.


Keep warm while making a thin omelette for a garnish. Whip 1 egg, ½ tsp. salt and 1/8 tsp. pepper. Fry in a large pan in a thin coat. Turn over. Cut this omelette in long strips to put on the fried rice. 
Serves 6-8
